5 Easy Meals for College Students

Emma Jensen

As a college student, I am constantly trying to plan out my meals for the week so I can go grocery shopping before I start my classes. However, for awhile I hated doing this because I didn't want to spend money on food I wouldn't enjoy or even attempt to cook. Recently, I have been finding myself on Pinterest and I have now just started to get into cooking my own food. If you want cheap and easy to make meals throughout the week, keep reading!

Tacos

One of the easiest things to make as a college student with little to no money is tacos. What’s great about tacos is that you can switch it up every single time and have something that tastes a little different depending on what you put in it. My personal fav is buying small packs of Doritos and doing at home walking tacos. The link attached to the picture below is the recipe that I use and highly recommend, BUT I will also link a great chicken street taco recipe that is sure to make your tummy happy.

Fajitas

This is my absolute favorite fajita recipe I’ve tried and it is SO EASY. This recipe includes 2 chicken skinless boneless breasts, red, yellow, and/or green peppers, onions, fajita seasoning, a lime and tortillas. That’s it! I get all these groceries at Target. I personally like the Good & Gather brand of chicken and if you want to make this meal even quicker Good & Gather sells pre-seasoned and precut fajita chicken strips that you can throw in the microwave. Next, Target sells peppers in a two pack, normally I go for the red and yellow peppers but it’s up to you and your taste buds of which color combo you prefer! The fajita seasoning, lime juice, onion, and tortillas were not hard to find and were in their designated aisle. It’s an easy dinner that also provides lots of leftovers for when you don’t want to take 15 minutes out of your night to cook. The original recipe calls for cumin, onion powder, and some other spices. But if you don't want to go through all of that I highly suggest finding fajita seasoning in the spice aisle. Click the picture below to get the full instructions, it shouldn’t be too hard to figure out!

Mac and cheese, spaghetti, and fettuccine alfredo are my personal fav pasta dishes that I frequently cook. The supplies for mac and cheese and spaghetti can normally last me a few weeks, so typically I eat pasta about 2-3 times a week. I like pasta because it is very filling and can be easily stored and preserved as leftovers. Of course, you can always go to the store and pick up Kraft mac and cheese, however, cooking your own meals is a great way to know exactly what you’re putting into your body. Linked below is a fettuccine alfredo recipe, a chicken parmesan recipe, and a baked mac and cheese recipe.

Pizza

For all the pizza lovers out there… this one's for you. Making a pizza at home might seem like it will be really stressful but it really isn’t. If you want to go the extra mile and make your own dough, go for it! But for those of you like me, dough in a can is just good enough. You can get pizza crust from any grocery store and the one that I like to use the best would be the Pillsbury brand. Next, choose your toppings! I personally like mozzarella cheese, pepperonis, and maybe even a little pineapple (sorry not sorry)! Follow the cooking instruction below for how long to put it in the oven for and then you’re done! This is a great activity for you and your partner (or family) to do to spend time together while making dinner.

Burgers

I love cheeseburgers and honestly the whole reason I started eating and cooking at home was because I was spending too much money eating cheeseburgers every single night from fast food places. While those days are past me (hopefully), I have turned to other alternatives to get my burger fix. For me, I LOVE cheeseburger sliders. Linked in the picture below is a recipe I am dying to try! I hope they taste like the sliders from Chili’s.
